Shell Egg Grades
Official USDA grademarks for shell eggs. U.S. grades are based on nationally uniform standards of quality developed by the Standardization Branch. These standards promote uniformity in Federal grading services. The grade is determined by the interior quality of the egg and the appearance and condition of the egg shell. The official USDA grade shield indicates the product's quality level with shell eggs categorized into one of three consumer grades:
Grade AA – The freshest and highest quality eggs will receive a Grade AA.
Grade A – Very high quality eggs will receive a Grade A.
Grade B – Lower in quality, these eggs are usually used for baking and institutional use, and are not typically found in retail stores.
Egg Grading Manual
This manual is an aid in teaching both beginning and experienced egg graders the correct interpretation and application of the U.S. standards, grades, and weight classes for eggs. It can serve as a guide in short courses or grading schools when supplemented with lectures, group discussions, and demonstrations. This manual should also prove useful to those teaching or working in the production, processing, and marketing of eggs.
